New England Clam Chowder 1/4 lb salt pork 1 onion, thinly sliced 3 medium red potatoes, peeled and cubed 3 cups milk 1 quart clams 1/8 lb butter 1 1/2 cups water salt and pepper to taste pinch of garlic Powder In a large skillet over low-medium heat put your cut up salt pork and render out the drippings, reserving the craklings. Brown the onions lightly in the remaining grease and remove.
In a sauce pan place water to boil with a little salt and add potatoes, cook ten minutes. add onions, clams and remaining ingredients and allow to simmer for about 45 minutes over very low heat, uncovered.
Garnish with the cracklings and chopped parsley if desired.
