Coconut & Cardomon Fish Soup
white fish (catfish, orange roughy)
dried hot chili
Boil carrots, potatoes, sweet potatoes in 3/4 pot water till cooked.
Brown whatever white fish in safflower oil and take out.
Cook half onion, couple T minced ginger in safflower oil in same
pot. Add approx. 10 crushed cardomon seeds, some powdered corriander,
some tumeric, s alt, dried hot chili (amnt. var.)
Then add tomato wedges (2 tomatoes). Other greens if like (such as
green beans). Cook a bit.
Then add veg stock, carrots, potatoes, etc. and fish (broken up).
Bring to boil. Simmer a little. Add can of coconut milk. Simmer
for a bit over low heat.
Then add coconut bits, fresh cilantro as topping. Let sit a few
minutes before serving.
