Corn Potato Chowder 04

Potato, Corn and Pancetta Chowder 3 lb of boiling potatoes, peeled and cubed 2 oz pancetta finely chopped 6 shallots, finely chopped 4 garlic cloves finely chopped 1 qt homemade chicken stock, defatted 1 qt whole milk 1 bag of frozen baby corn (10 oz) 2 T unsalted butter 2 sprigs of fresh thyme 2 bay leaves white and black pepper, salt to taste
Saute the onion and pancetta in the butter until soft. Add the garlic and saute until it's light gold. Pour in the chicken stock, thyme, bay and salt and pepper to taste and bring to a boil. Let the potatoes cook about half way and then add the milk. Simmer until done, then dump in the bag of corn.
