Cottage Cheese Soup
4 Tbsp. butter 1 Tbsp. grated onion 4 Tbsp. flour 4 c. milk 1 1/2 tsp. salt 2 c. cottage cheese chopped chives
Melt butter; add onion and cook until onion is clear, not browned. Work in flour, then add milk. Cook until smooth and thickened, stirring constantly and add salt. Rub cottage cheese through sieve and add to liquid, stirring until well blended. Serve at once with chopped chives.

This is a WONDERFUL soup! Serve it as an appetizer with a loaf of freshly baked dill bread.
