Cream of Bell Pepper Soup
Yield: 8 servings

1 sm onion, minced
1 qt chicken stock
1 stalk celery, minced
2 c cream or milk
3 bell peppers, chopped
4 tb butter
1/4 c flour
Salt to taste
Pepper to taste

Saute onion, celery, and bell pepper in butter until soft. Stir in
flour. Add chicken stock and bring to boil. Add cream and heat
through but do not boil. Add seasonings.
