Cream of Broccoli Soup

2 gallons chicken stock
3 Lbs fresh broccoli, chopped
2 cups onions, chopped
2 cups celery, chopped
2 bay leaves
2 tsp salt
1 tsp white pepper
1 cup roux (half butter and half flour)

Heat stock to boil then reduce heat to a simmer. Add broccoli,
onions, celery, bay leaves, salt, pepper. Simmer 1 hour, then stir
in roux little at a time and use a wire wisk. then simmer additional
1/2 hour. Stir occasionally.
