Cream of Carrot Soup
6-8 servings

1-2 tbs butter or margarine
1 tbs curry powder
1/2 tsp paprika
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp garlic, crushed
1 sm onion, freshly diced
2-3 lg carrots, finely diced
6 cups water
2 tbs lemon juice
2 tbs soy sauce
1 tsp salt
1 cup sour cream
1 cup half-and-half

In a 3-quart pot melt butter. Roast spices for 1 minute. Add the
onions and saute several minutes. Add the finely diced carrots
and water. Simmer until carrots are very soft. Puree in a blender.
Add all remaining ingredients. Heat slowly and serve.
