Cream of Cauliflower Soup
6-8 servings

1 small onion, diced fine
2 tbs butter
1 lg head cauliflower, cut into flowerettes
1 tsp marjoram
6 cups water
1/4 tsp salt
1/2 tsp black pepper, freshly ground
1 cup cream
1/2 cup parsley, finely chopped

Heat butter in 3/4 quart pot Saute onions until transparent. Add
cauliflower and marjoram. Saute a few minutes more. Add 6 cups
water. Simmer until cauliflower is soft. Reserve several cauliflower
pieces. Puree remaining cauliflower mixture in a blender. Pour
cauliflower puree mixture back into pot. Add cream and reserved
cauliflower pieces. Heat slowly. Season with salt and pepper to
taste. Add parsley. Serve.
