CREAM OF CELERY SOUP

celery
3 medium potatoes
1 medium onion
1 - 2 teaspoons vegetable stock powder
water

From one bunch of celery, trim off all the bits that you would
normally throw away (leaves, tops, etc.), wash them and put them
in a large saucepan. Peel potatoes and onion, roughly chop and
add to celery. Add water to about 3/4 the depth of the vegetables.
Simmer for 20 - 30 minutes until the potato is cooked, then puree
in a blender or food processor. This may need to be done in 2 or
3 batches. Season to taste with the stock powder (or your favourite
seasonings). Serve hot.

NOTE: if the soup is too thick, add more water. If it is too thin,
add more potato next time.
