Cream of Lettuce Soup

1 small head/bunch of lettuce (romaine, green leaf, butter varieties)
2 T butter
1/2 medium onion, finely chopped
3 T flour
4 c total milk and chicken broth
salt
pepper
cayenne
tabasco to taste
pinch nutmeg

Wash and tear up lettuce without drying it off. Cook over medium
heat in a covered soup pot until well wilted. Set aside. Melt
butter in pot and gently saute onions. Add flour and cook to form
a roux. Add milk and broth, stir well (a whisk is best), and cook
until thickened. Puree cooked lettuce in a blender along with some
of the liquid. Combine puree with remaining liquid and heat. Add
salt (less if using canned broth) and other seasonings. Enjoy with
a grilled cheese sandwich.
