CREAM OF LETTUCE SOUP

1/2 cup butter
1 large onion, chopped (1 cup)
1 clove garlic, crushed
1 cup flour
5.5 cups chicken stock (or 3 cans chicken broth)
6 cups chopped iceberg lettuce (about 1 lb)
1 cup 1/2 and 1/2 cream
1/2 cup shredded iceberg lettuce
freshly ground pepper
1 tbs butter

Melt butter in a large saucepan or Dutch oven. Saut\xe9 onion and
garlic until soft. Stir in flour. Gradually add chicken stock
stirring constantly. Add lettuce and simmer 20 minutes. Remove from
heat.

Whirl the mixture in a blender until smooth. Return pureed soup to
pan and bring just to boiling. Remove from heat and stir in cream
and pepper.

In a small saucepan, saut\xe9 the remaining lettuce in the remaining
butter just until wilted. Use as a garnish. Good warm or chilled.
