Creamless Creamy Tomato Soup
Serves 6 as an appetizer, 3 as a main course.

1 medium onion, chopped
2 cloves garlic, chopped
1 tablespoon vegetable oil
2-3 cloves
1 teaspoon dried basil
6 pounds ripe tomatoes, skinned and seeded
1/2 teaspoon ground pepper
salt to taste

Place onion, garlic, vegetable oil and cloves in COLD 2-quart
saucepan. Cook over low heat, stirring occasionally, until onions
become transparent. Stir in basil. Cook one minute longer.

Add tomatoes and pepper. Cook for 20 minutes over medium heat.
Mixture will start to weep. Stir vigorously every 5 minutes.

Empty contents into blender. (Top will be very hot.) Pulse several
times. Blend on highest speed for 2 minutes.

Return to saucepan, add salt to taste.
