4 T butter
1 Large sweet onion, diced
3 peeled, chopped potatos
3 cups homemade chicken stock
1/4 cup very dry sherry
1 1/2 t of curry powder
dash cumin
2 cups half and half
1 T flour
salt/ground black pepper
1 cooked chicken breast, diced
1/2 cup mushrooms sauteed (optional)

Heat 3 T butter in a medium sized pot, add onion and potato, stir
on low until softened (about 10 minutes). Add the stock, curry
powder and cumin. Cook 30 minutes partially covered or until potatos
are very soft. Meanwhile in a small pan make a roux with 1 T butter
and 1 T flour. Stir the two ingredients until pasty and then with
a whisk, add the half and half onlow heat. Heat the half and half
until it is thickened. Puree the potato mixture until smooth. Add
the half and half and the chicken, sherry and if you like, the
sauteed mushrooms.
