Print this Recipe    Curried Squash Soup

1 large onion, sliced
2 leeks
1 tablespoon oil
1 large or two medium butternut, peeled and cubed
3 sweet potatoes, peeled and cubed
2 golden delicious apples, peeled and quartered
1/2 teaspoon ginger
2 teaspoons curry powder
Salt and pepper to taste
1 tablespoon sugar
1 chicken broth cube
Water to cover the veggies

Brown onion and leeks in oil. Add everything else and simmer about 45
minutes.

Blend till smooth, and adjust seasonings. As with all soups, the flavor
improves with time, so make it a day or two before you need it.

Notes:
I had originally used 1 teaspoon curry powder, but added another when I
heated the soup. One wasn't quite enough. I had also used 1 teaspoon
sugar originally, and increased that to a tablespoon.
