Fish Chowder

1/4 pound pancetta (diced)
1 large white onion (diced)
4 red potatoes (diced)
2 bay leaves
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp cayenne pepper
salt & black pepper
3 1/2 cups chicken stock
1/2 cup clam juice
4 cups milk
3 stalks celery (sliced)
1 ounce dry sherry
1 1/2 pounds smoked fillet of cod 1 inch cubes.

Brown pancetta in pot. saute' onion until clear. Add: Chicken stock,
clam juice, potatoes, bay leaves, salt, black pepper, cayenne
pepper, sherry, celery, thyme, oregano. Bring to a boil and reduce
to a simmer for an hour. Add: milk and cod and simmer for 10 minutes.
