Fish Chowder 05

New England Fish Chowder
4 slices salt pork, partially broiled 1 medium onion, cut up 1 large fillet of haddock, or other firm fish Pepper as desired 12 saltine crackers 1/2 cup milk--or cream 1 cup white wine 1 cup water 1 tbsp. flour 2 tbsp. snipped parsley
In a large saucepan, arrange the slices of pork, and cover with the onion. Sprinkle the fish with pepper; then cut in strips and place on the onion. Soak the crackers in cream until soft; then beat lightly and spoon over the fish. Add the wine and water; cover and simmer over low heat 45 minutes. Remove and discard the salt pork. Spoon the fish mixture into a serving dish. If desired, thicken with the flour blended with 2 tbsp cold water. Add with the parsley to the gravy and stir over low heat until desired thickness. Pour over the fish mixture and serve hot. Serves 4.
