SMOKED HADDOCK CHOWDER
1 lb smoked haddock or cod
2 pts water
2 oz butter
2 onions, sliced
2 Tbs flour
8 oz potatoes, peeled and diced
4 oz grated carrot
4 oz peeled prawns
1/4 pt cream
1 small can sweetcorn drained
seasoning and chopped parsley
Simmer fish in water for 10-15 minutes. Drain, reserving liquid,
then add flaked fish. Melt butter then add onions, cook 2 minutes.
Stir in flour, add fish stock and bring to boil. Add potatoes,
carrot and prawns, simmer for 10 minutes.
Stir in cream, sweetcorn, flaked fish and seasoning. Heat through.
Serve hot and sprinkled with parsley.
