French Onion Soup
Measurements are in metric cups: 1 cup = 250ml
4 large onions, thinly sliced 2 cloves garlic, crushed 30g butter 20ml oil 5 cups good beef stock 0.25 cups dry red wine 0.25 cups plain flour 1 French bread stick 0.25 cup parmesan cheese
Heat butter and oil in a heavy-bottomed large saucepan. Add the onions, cook over a low heat until golden-brown (about 20 mins). Add flour, cook for another minute. Add the wine and stock, and bring to the boil, stirring constantly until mixture thickens slightly. Simmer for 10 minutes
Meanwhile toast the bread lightly. Place in serving bowls, and pour soup into bowls. Sprinkle with cheese and serve.
