French Onion Soup Serves 4
50g/2oz butter 2 medium onions, sliced 30ml/2 Tbsp flour 900ml/1.5 pints beef stock Salt & black pepper 1 bay leaf 4 slices French bread 75g/3oz Gruyere cheese, grated (or other strong hard cheese)
Melt butter in saucepan and fry the onions for 5--10 minutes until browned. Stir in flour and cook for 1 minute. Remove pan from heat and slowly stir in the beef stock, add seasoning and bay leaf. Return to the heat and bring to the boil and cook slowly until thickened. Cover and simmer for 30 minutes. Remove bay leaf and adjust seasoning. Put a slice of bread in each bowl, cover with soup and top with cheese, or add bread to soup in a large casserole, top with cheese and grill for a few minutes.
