Chilled Scandanavian Fruit Soup
1/2 cup each of dried prunes and apricots 1/2 cup seedless raisins 1 cinnamon stick 2 cooking apples, peeled 2 fresh pears 2 cups (one pound can) unsweetened sour red cherries 1 box (3 oz) cherry flavored gelatin 1 cup boiling water lemon slices.
In large kettle, soak prunes, apricots and raisins in 3 cups cold water for 1 hour. Add cinnamon stick, sliced apples, and pears. Simmer, covered for 15 minutes, or until fruit is tender. Add undrained cherries and bring to boil. Dissolve gelatin in boiling water. Stir gently into fruit. Chill overnight. serve with lemon. Makes 4 servings.
Note: I like this as a fruit dessert as well, leave out the gelatin and serve warm with whipped cream or make a crust and bake.
