Garlic, Egg, and Bread Soup Take a handful of fresh green leafy herbs, mostly cilantro, maybe some parsley (basil might be good too). Add several cloves of roasted or raw garlic. Mash together in a mortar and pestle. Stir in a drizzle of olive oil. The mixture should be coarse, not pasty.
Place a heaping spoonful (about 1/8-1/4 cup) of the herb/garlic mixture in each of two bowls.
Heat clear broth on the stove.
In another pot of simmering water, crack two eggs.
Add one ladleful of broth to each bowl. Place a poached egg on top. Add cubes of french bread around the side of the egg.
The result will be a clear soup with herbs at the bottom, an egg on top, and bread cubes around the edges.
