Garlic Soup

3 Tbs. vegetable oil
3/4 c. chopped onion
1/3 c. chopped celery
12 cloves garlic, halved
6-8 c. chicken broth
1/4 tsp. freshly ground pepper
dash salt to taste
8 slices day old french bread
1 c. shredded Fontina cheese

In large saucepan heat oil over medium-high heat. Add onion and
cook, stirring occasionally until browned. Add celery and garlic.
Cook, stirring, until tender. Add chicken broth and pepper. Bring
to boil. Reduce heat, cover and simmer 20 minutes. In blender or
food processor, process soup in small batches until smooth and
return to pan to keep warm. Meanwhile, preheat oven broiler.
Sprinkle each slice of French bread with 2 Tbs. cheese. Broil
until cheese is melted and bread is lightly toasted. Place 1 slice
of toasted bread on top of each serving of soup.
