Goulash Soup

2 c. chopped onion
1/4 c. shortening
3 bell peppers (green or red), chopped
3 T. tomato paste
1 lb. lean beef, cut in 1 in. cubes
Dash of red pepper
1 t. paprika
2 cloves garlic, minced
1/2 t. salt
6 c. beef broth
1 T. lemon juice

1/4 t. caraway seeds, optional
1 c. cubed potato

Fry onions in shortening until transparent. Add peppers and tomato
paste. Cover and simmer 10 min. Add remaining ingredients (except
potatoes). Simmer 1 1/2 hrs until meat is tender. Add potatoes
if desired and simmer until potatoes are done. Serves 6. (Tastes
better the next day).
