Traditional Goulash
500grs beef, cut into cubes 1 lge onion 250grs mixed carrots and parsnip roots cut into strips 1 green pepper sliced 2 tomatoes skinned, deseeded and chopped 300grs potatos cubed a handful of very small square pasta
Chop the onion very finely and lightly fry in 2 tblspoons of fat. Sprinkle with 1 heaped teaspoon of red (Hungarian, not Spanish or other,as the taste is different!!!) paprika, toss in the meat, 'seal' it quickly while stirring it, then add green pepper and tomato and steam slowly under lid until meat is almost tender. Add root vegetables and potatoes, salt and caraway seeds and 1.5liter water. Bring it to boil and let it simmer until vegetables and meat are tender. If liked it hot, add a few slices of hot green pepper,then add the pasta and let it cook for a further 10 minutes. Serve it in soup bowl.
