Green Bean Soup

olive oil
1 onion, diced
3 cloves garlic, pressed
1 tsp dried oregano
1 pound of green beans cut into 1.5 inch pieces
2-3 carrots sliced into rounds
2 tomatoes chunked
6 cups vegetable stock or broth
1 cup hominy - canned or cook your own
1 tsp minced chilpotle chili (get it in cans or jars)
1 avocado sliced
2 limes - cut into wedges
cilantro for garnish

Saute onion and garlic and oregano in oil till tender. Don't brown.
Add the beans, carrots, tomatoes and stock. simmer 20 minutes till
the veggies are done but retain some crispness.

Add hominy and chili heat through.

Ladle soup into bowls. Squeeze lime over. Top with cold avocado
and cilantro.
