Lentil Soup
2 cups lentils water 2 carrots 1 stalk celery + a few leaves 1 onion 2 garlic cloves red wine 1 tsp brown sugar 1/4 cup red wine vinegar 2 tbsp lemon juice scallions thyme salt pepper
Wash lentils and put in pot with 6 cups water. Boil for about 45 min, adding water if needed. In the meantime, chop onions, garlic, carrots, celery. Saute veggies in a separate pan until tender-crisp. add veggies to lentils, adding water if necessary. add thyme and about 1/2 cup red wine and cook for another 1/2 hour or so, until the lentils are soft and the flavors have mixed. Add vinegar, lemon juice, salt, pepper, and sugar and cook for about 10 minutes longer.
When ready to serve, dish into bowls and sprinkle with a bit of red wine vinegar and chopped scallions. add a bit of yogurt on top if you like.
The soup can cook for as long as you want. It seems to get better the longer it cooks.
