Winter Lentil Soup 5 slices bacon 1 leek 1 carrot 1 stalk celery 1 tsp cumin 5 cloves 1 lb. dried lentils 3 bay leaves 10 cups water 1 lb. cooked sausages (regular, debreziner or other) Salt and freshly ground black pepper
Chop the bacon into 1 4 inch bits and cook in a large saucepan until it has rendered its fat and has browned.
Chop the vegetables finely and add to the bacon and bacon fat; cook until soft and slightly browned.
Add the spices and continue cooking for a few minutes.
Add the lentils, bay leaves and water. Cook until the lentils are soft - about 45 minutes.
Slice the sausages into 1 4 inch slices and add to the soup. Bring up to boiling point.
Adjust the seasoning to taste.
Serve very hot, preferably with fresh crusty French bread.
