Lentil Soup

1 bag lentils
1 1/2 to 2 cups carrots, chopped fine
1 1/2 cups white or yellow onion, chopped fine
1 cup celery, chopped fine
1 teaspoon salt
1 teaspoon pepper
pinch cayenne pepper (optional)

Combine the lentils and the vegetables in a big pot with about 4
cups of water. Bring to a boil, and then let simmer until it has
cooked down and lentils are soft.

Blend in a blender a little at a time until smooth. Transfer to
a clean pot.

Bring it to a boil again, and then let it simmer another fifteen
or twenty minutes.

Add pepper, salt, and a couple of pinches of cayenne pepper.

Serve with a dab of sour cream in the center of the bowl.
