Green Soup

15g / 1/2oz butter or margarine
1 onion peeled and chopped
900ml / 1 1/2 pints light veg. stock or water
700g / 1 1/2 lbs peeled and diced potatoes
greens of your choice
3-4 tablespoons cream, optional
nutmeg, optional

For greens, use 1 lb watercress or 1 lb of chopped outer lettuce
leaves with chopped mint or parsley stirred in or 1 lb of spinach
leaves or 8-12 oz of nettle leaves chopped, or 75g/ 3oz of chopped
sorrel leaves.

Fry onions in butter or margarine without browning. Add potatoes
and cover. Cook for 10 minutes. Stir once or twice but do not brown.
Stir in stock or water and cook potatoes until tender. Puree.
Rewarm without boiling. Serve with swirl of cream if liked, seasoning
and garnish.
