ONION SOUP A LA LYONNAISE
(6 Persons)

4 large onions
50 gr butter
1 Tbsp. oil
1 Tbsp. flour
2.5 dl. white wine

Chop onions and saute them in a mixture of oil and butter. They
must brown a little without burning, stir frequently so it's equally
done. Sprinkle with flour, add hot water and white wine, season,
cover and let it gently boil for 20 minutes. Toast bread and
place 1 slice in every individual bowl, sprinkle with grated cheese
and pour soup over it, spread some more cheese an put under the
grill.
