Oyster Stew
Yield: 6 Servings

4 whole shallots; minced
6 tb butter
18 whole oysters; with liquor
2 c milk
2 c heavy cream
1/2 c dry sherry

Saute shallots in 4 tablespoons of butter for 5 minutes. Add oysters
with their liquor. Bring to a boil, add milk and cream, salt and
pepper. Simmer 2 minutes. Add sherry and again bring to a boil.
Serve at once, with a teaspoon of butter in each serving.
