Pasta Fagiole

2 Italian sausages, sliced or more, hot or mild
1-2 cloves garlic, finely minced
1 small onion, chopped
1 tsp. dried oregano or to taste
1/4 tsp. dried basil or to taste
2 16-ounce cans tomato sauce or 1 can tomato sauce and 16 ounce can
tomatoes in puree
2 15-ounce cans cannellini beans, drained and rinsed
1 cup mozzarella cheese grated
8 ounce package ditillini noodles

Cook the noodles according to directions, drain and set aside.

Saute the sliced sausage in a little oil until cooked through (use
a large pot). Remove from pot and drain on paper towels. Drain most
of the grease from the pot and add the onions and garlic, saute
until soft. Add the sauce and seasonings (you may want to add a
little water to thin the soup out ) and add the sausage. Simmer
about 15 minutes for the flavors to blend. Mix in the noodles and
serve with the cheese sprinkled over each serving. This will serve
about 5-6 and is good with some crusty bread and a green salad.
If the soup seems too thick just thin with water.
