POTATO CHEESE SOUP

2 T butter
1/3 c celery
1/3 c onion
4 c russets, cut in 1/2" cubes
3 c chicken broth
2 c milk
1 1/2 t salt
1/4 t pepper
dash paprika
2 c shredded sharp Cheddar
French fried onion rings or croutons (opt)

Melt butter, add veggies and cook over medium until tender. Add
potatoes and broth. Simmer until potatoes are tender. Pour in
blender and blend until smooth. Return to saucepan. Stir in milk
and seasonings. Heat through. Add cheese, stirring until melted.
Garnish with onion rings or croutons.
