Vichyssoise

1 lb leek (mostly white part)
1 lb potatoes (peeled and chopped)
3 1/2 c water or stock
1 1/2 c milk (or 1 c milk and 1/2 c cream)
salt and pepper
chives or herb garnish

Simmer chopped cleaned leeks and potato in water or stock, covered,
until very tender. Puree in a blender. When ready to serve, stir
in the milk and garnish with chives or other fresh herbs. Add salt
and pepper to taste right after pureeing.

Can be served hot, though it is traditional to serve cold.
