LEEK AND POTATO SOUP

50g butter
1 clove garlic, crushed
3 medium sized leeks
2 to 3 medium potatoes
4 cups water
3 tsp chicken stock powder
1 tsp green stock powder
1 tsp sugar
1/4 to 1/2 cup cream
salt and pepper to taste

Melt the butter in a large saucepan. Gently cook the garlic and
thinly sliced leeks (use all the white part and the light green
leek leaves, but not the dark outside leaves). Don't let the
vegetables brown. Add thinly sliced peeled potatoes with the water,
stocks and sugar and simmer for about 10 minutes or until the
vegetables are just tender. Blend or process the soup. If you
want a chunky soup, mash with a potato masher. Add cream to your
taste and adjust seasoning.
