Potato Soup
6 medium red or white potatoes, cut up 4 green onions, chopped 3 carrots, chopped 2 celery sticks, chopped 1 green pepper, chopped about a third of a head of broccoli, chopped a handful of chopped fresh cilantro salt, pepper and garlic powder (to taste) sour cream
Boil the potatoes (I leave the skins on) in water for about 30 minutes, or until they are falling apart. Add or pour out water until it is around 3 cm above the potatoes. Mash them in their cooking water, but don't be too thorough about it. Add the green onions, carrots, celery, pepper, broccoli, salt, pepper and garlic. Simmer without a cover for about 25 minutes or until the carrots are tender. The starch from the potatoes should thicken the soup. Remove from heat. Add the cilantro. I serve it with sour cream on the side: some people prefer it with sour cream, but I like it plain.
