Potato Soup
6 potatos peeled and cubed chicken stock or water 1 large onion butter milk or half & half flour black pepper ground salt
First you peel the potatos and chop the onion. Sautee the onion until soft in a 4 quart pot with a couple tablespoons of butter and then add the potatos, sautee about 5 min and then add your liquid to cover the potatos. I think it might be about 6 cups of liquid (the chicken stock or water). You will simmer this until the potatos are soft so it will take about 45 minutes. In a smaller pan melt 2 tablespoons of butter and add 2 tablespoons of flour to it and mix to a paste. Add about 2 1/2 cups of milk or half and half and stir with a wire whisk until the flour is blended. Add 1 cup of grated or shredded cheese now if you want it. Let the milk mixture thicken and keep stirring. When the potatos are cooked until soft add the milk mixture to them and stir. Season with salt and pepper (add the 1/2 cup of wine or snipped fresh dill if you want those now).
