Potato Soup
Serves 4

12oz/360g potatoes, diced
6oz/180g onion, roughly chopped
1 clove garlic, chopped
3/4 pint strong chicken stock
1/4 pint milk
1oz strong Cheddar cheese, grated
nutmeg
spring onions, or chives to garnish

Place potatoes, garlic and onion in the stock and bring to the
boil, reduce heat, cover and allow to simmer for 25--30 minutes.
Pour mixture into a blender and process until smooth. Return the
soup to the saucepan and allow to simmer. Add the cheese and season
with nutmeg, pepper and salt if needed. Stir well to allow cheese
to melt and just before serving add the chopped spring onion or
chives.
