Spiced Pumpkin and Coconut Soup

1 Tbs butter
4 cloves garlic
2 tsp ground cumin
1 tsp ground coriander
750g pumpkin
1 cup water
1 cup coconut cream
1/2 tsp salt
1 tsp (more or less) pepper sauce

Cook the butter and finely chopped garlic together in a large pan
with lid on 1 - 2 minutes. (Don't burn the garlic!!) Add the
spices and cook a further minutes or so, before adding the pieces
of uncooked pumpkin and water. Cover and cook gently for 10 minutes
or until pumpkin is tender, adding more water if it evaporates
during this cooking. Leave until cool enough to handle, then scoop
out the seeds and skin and discard them. Puree in a food processor
then add coconut cream, salt and hot pepper sauce. Taste to balance
the flavours, adding more water or coconut cream if you think it
is necessary. Sieve the soup to remove any debris, then re-heat
when required.
