Roasted Pepper 03

Roasted Sweet Pepper Soup
2-3 red peppers 1-2 potatoes or left over mashed 1 onion chicken stock 1 hot pepper (or to taste) milk or cream fresh cracked black pepper cilantro nutmeg cumin
Roast the peppers [you've already done that] and cut them up after peeling and seeding. Seed and cut up the chile pepper [or jalapino, etc]. Cut up the onion [sometimes I use a variety of onions - shallots, leeks]. Cook the potatoes as if you were going to mash them - peel, cut into small chunks, boil until soft. Saute the peppers, onions and potatoes in olive oil to cook the onions and mix the flavors. In small batches put the pepper/potato mix in the processor or blender with sufficient stock to blend to smoothe. Put blended mix batches into a large pot to heat. Add more stock if it's too thick. Add milk or cream at the end to give it a creamy taste.
