Finnish Salmon Soup Serves 2 to 4
1/2 kg potatoes 1/2 kg salmon (real fresh salmon is best) 1 small onion 1 dl milk or cream 1 tbsp margarine or butter some dill water
Depending on what piece(s) of salmon you happen to buy, you might first have to take out the bones. You don't have to skin it, however; just clean it. Then cut the potatoes (peeled) and the onion into small pieces and place them into a cooking pot along with the salmon. Fill the pot with enough water to cover everything. Cook (carefully) until the fish is totally cooked. Add milk/cream and butter. When the butter has melted add the dill (cut) and serve.
