She Crab Soup

2 Tbsp butter
1 green onion chopped finely
1 rib celery diced finely
2 Tbsp all purpose flour
1 qt milk (4 cups)
2 cups whipping cream
3 cups cooked she crab meat with their eggs (or 2 hard boiled eggs chopped
instead of crab eggs)
salt
white pepper
dash hot pepper sauce
1/3 cup Madeira wine
paprika

In three quart heavy sauce pan, melt the butter, add the onion and
celery and cook until onion is translucent. Stir in flour and cook
briefly then add the milk and cream. Heat to boiling stirring
constantly, then remove from heat and allow to cool a few minutes.
Add crab meat and chopped eggs. Season to taste with salt, pepper
and hot sauce. Add wine at the last minute before serving. Sprinkle
with paprika.
