Split Pea Soup 1 ham hock 2 cloves crushed garlic 1 medium onion 1 1/2 cups split peas stock powder 2 Tbsp flour 100 mls milk seasoning Saute the finely chopped onion and the garlic in a little oil or butter, then add the ham hock, and the split peas. cover with water ( about 6 cups) and bring to boil. Add 3 tsp powdered stock. Simmer for 1 1/2 hours. Remove the ham hock, let cool a little and remove and shred the meat. Puree the peas, either using a food processor, or simply with a potato masher. Return all meat to the soup. Add water so that soup is still about 6 cups. Put the milk in a shaker and put the flour on top, shake well, then drizzle into the soup, stirring well till it thickens a little. Correct the seasoning with more powdered stock, salt and pepper. Serve with crusty rolls.
