Print this Recipe    Swiss Strawberry Soup

2 pints fresh strawberries

1 cup orange juice
1 1/2 t quick cooking tapioca
1/8 t cinnamon
1/8 t allspice

1 cup buttermilk
1/2 cup sugar
1 T lemon juice
1 t grated orange or lemon rind

Wash and hull berries. Puree. Add orange juice, tapioca, cinnamon
and allspice and stir.

Pour into casserole dish and microwave 5-6 minutes. Stir in
buttermilk, lemon juice, and grated peel.

Chill, covered.

Variation: For a great summer drink, do as above, then liquefy in
blender.
