Print this Recipe    Sweet Potato Soup

1 1/4 lb sweet potatoes
3 carrots
1 large stalk celery
1 bay leaf
6 c water
2 Tbsp lemon juice
1 tsp paprika
1 1/2 Tbsp butter
1/2 c heavy cream

Peel sweet potatoes and cut in small dice. Scrape and thinly slice
carrots. Slice celery. Put vegetables and bay leaf in a pot with
water. Bring to a boil, then lower heat and let soup simmer for
about 1 hour, stirring occasionally. Before serving, add lemon
juice, paprika, butter and cream, and continue to cook for 2-3
minutes, stirring constantly. Remove bay leaf before serving.

Serves 6
