Sweet and Sour Cabbage Soup
2 teaspoons canola or vegetable oil
2 onions, chopped
6 cups shredded green cabbage
4 cups low sodium beef broth
1 cup canned crushed tomatoes
1/4 cup raisins
2 tablespoons packed light brown sugar
2 tablespoons fresh lemon juice
1 teaspoon salt
1/4 teaspoon caraway seeds
pinch of freshly ground pepper
1/2 - 3/4 lbs flanken
Trim fat off the flanken, cut it into chunks and brown it in a pot.
Once the meat has been browned, remove and set it aside.
In the same pot, saute the onions until golden, about 5 minutes.
Add the cabbage, broth, tomatoes, raisins, brown sugar, lemon juice,
salt, pepper, caraway seeds and 2 extra cups of water; bring to a
boil. Reduce the heat, add the flanken and simmer, covered until
the flavors are blended, 1 to 3 hours.
