Tomato Bisque

2 Tbsp butter
3/4 cup chopped onions
1 large baking potato (1-1/2 cups), peeled and diced
3-1/2 cups chicken broth
1 tsp sugar
1 tsp dried basil
4 Tbsp tomato paste
1 bay leaf
1/4 tsp pepper
28-ounce can whole tomatoes with juice
sour cream
chopped parsley

Melt butter in 3-quart saucepan, add onion and saute for 5 minutes
over medium heat, stirring occasionally. Add potato, bouillon cubes,
water, bay leaf and pepper. Cover and simmer 5 minutes. Add tomatoes
with juice, tomato paste, and sugar to saucepan with potatoes. Stir
well. Cover and simmer 20 minutes. Remove bay leaf. Puree small
batches of potato and tomato mixture in blender until smooth. Serve
with sour cream and parsley. Makes 6 to 8 servings.
