Tomato and Celery Soup

1/4 cup (1/2 stick) unsalted butter
6 pounds tomatoes, coarsely chopped
2 celery stalks, diced (leaves reserved)
sugar
salt and freshly ground pepper
whipped cream, slightly whipped
croutons

Melt butter in large pot over medium heat. Add tomatoes and bring
to a boil, stirring frequently. Reduce heat; cover and simmer
until tomatoes are soft and juicy.

Strain tomatoes through sieve over large saucepan, pressing with
back of spoon. Add diced celery and bring to boil. Reduce heat
to low and cook for 5 minutes. Season with sugar, salt and pepper.
Ladle into bowls. Spoon dollop of cream into each serving. Sprinkle
with croutons. Garnish with celery leaves.
