QUICK TOMATO-ORZO SOUP
4-6 servings

1/2 cup orzo
2 (15-ounce cans) diced tomatoes or 2 pounds diced fresh tomatoes
1 cup chicken stock
2 tablespoons finely chopped parsley
1/2 teaspoons crushed, dried basil
6 tablespoons grated parmesan

Bring medium saucepan of water to boil and cook orzo 10 minutes at
full boil. Drain orzo. While orzo is cooking put canned tomatoes
in blender and puree coarsely. If using fresh tomatoes, cook over
medium heat 5-7 minutes until soft. Cool slightly and puree
coarsely. Put tomatoes in large saucepan and stir in chicken stock,
parsley and basil. Bring to a boil , reduce heat and simmer 5
minutes. Stir in cooked pasta and simmer 5 more minutes. Serve with
garnish of a little parmesan cheese.
