ITALIAN TORTELLINI SOUP
5 quarts (halves easily)

4 14 1/2-oz cans beef broth
7 cup water
1 lb sweet Italian sausage, cut into 1/2-inch pieces
1 9-oz box tortellini
1 9-oz box spinach tortellini
1/2 lb cabbage, shredded
1 small green bell pepper, cored and diced
1 med. zucchini, sliced
1 small red onion, chopped
1 med. tomato. diced
1 Tbsp chopped fresh basil
salt and pepper to taste
freshly grated Parmesan

Combine first 11 ingredients in large pot. Season with salt and
pepper. Bring to slow boil over medium-high heat. Reduce and
simmer until vegetables are tender, about 15 minutes. Serve with
Parmesan.
